TRICK OR TREAT WORKOUT
HEALTHY PUMPKIN PIE MARTINI
This is the time of year where there is pumpkin everything. Someone had me try pumpkin M&M’s the other day and it went too far. Seriously pumpkin does not need to be in everything, always from September through December. However, pumpkin does go very nicely with vodka 🙂 Every recipe I came across was chock full of sugar, dairy and high in fat so I decided to create my own healthy option which is just as tasty!
So let’s chat about the ingredients for a minute. You have two options depending on what type of sweetener you prefer or ease of buying less stuff. I originally bought straight pumpkin, but ended up putting a couple of drops of local honey in (you can use stevia or agave as well). Although the Pumpkin Pie Mix has more sugar, you consume such a little amount it ends up being the same as doctoring the straight stuff. I also wasn’t crazy about the weird whipped cream alternatives so decided to garnish with a dollop of coconut milk vanilla ice cream.
Ingredients (Makes 4):
1/4 Cup Pumpkin Puree or Pumpkin Pie Mix Puree
1/3 Cup Unsweetened Vanilla Almond Milk
1/8 tsp Cinnamon
1 tbsp per drink Non Dairy Vanilla Ice Cream
Steps: In a bowl, combine pumpkin pie puree, milk and cinnamon by stirring vigorously. In a martini shaker measure out 1.5 oz of vodka, add a heaping tablespoon of pumpkin mixture and ice. SHAKE. Strain into a martini glass and add a dollop of ice cream. Garnish with dash of cinnamon. Sip in moderation of course 😉
Last but not least we have to honor the King and Queen of Fitness for this year’s costume spotlight…
